Banchero, Historic pizzeria in San Nicolás, Buenos Aires, Argentina.
Banchero is a pizzeria in the San Nicolás neighborhood of Buenos Aires, known for Argentine-style pizza with a thick, airy crust and generous toppings of mozzarella. The restaurant sits on Avenida Corrientes 1300, right in the middle of the city's theater district.
Agustín Banchero came from Genoa in 1893 and opened the first location in the La Boca neighborhood. His son Juan moved the restaurant to its current spot on Avenida Corrientes in 1932.
The pizzeria is closely associated with the Fugazza con Queso, a pizza topped with onions and melted cheese but no tomato sauce. This style was partly invented here and remains a staple of the local food scene.
The restaurant is on one of Buenos Aires' busiest streets, close to several theaters, making it a natural stop before or after a show. It stays open late in the evening, which fits the rhythm of this part of the city.
The kitchen still makes a pizza combining mozzarella with roquefort cheese, a pairing rarely found in other Argentine pizzerias. This recipe has been kept unchanged since the founders brought it from Genoa.
