Dehesa del Carrizal is a winery in the Montes de Toledo region spread across 28 hectares of vineyards at elevations between 800 and 900 meters. The soil consists of clay and quartzite pebbles, which shapes the character of the wines produced here.
The vineyard was first planted in 1987 with Cabernet Sauvignon grapes, making it the first viticulture project in the Montes de Toledo region. The production facility was constructed in 1999, establishing the winery as a pioneer in the area.
The winery produces wine using international grape varieties and local Tempranillo, working within strict Vino de Pago regulations that shape the entire production process. Visitors can observe how these different grapes are handled with care and skill throughout the year.
The facility uses gravity barreling systems and temperature-controlled tanks with dedicated spaces for barrel and bottle aging. The mountain setting means visitors should wear appropriate footwear if planning to explore the vineyards on the grounds.
The building is architecturally integrated into the mountain landscape with a social area featuring Moorish brick design. This space can accommodate up to 100 visitors and creates a distinctive setting for gatherings.
