Sushi Saito is a Japanese restaurant featuring a 16-seat counter where guests watch chefs prepare traditional Edomae-style sushi using fresh ingredients from Tokyo's Toyosu Market. Each ingredient is personally selected by the head chef daily to ensure the highest quality.

This location opened in 2018 as the first international branch of the original Tokyo restaurant under Chef Takashi Saito's leadership. The expansion marked the first time the Tokyo establishment extended its operation beyond Japan.

The dining room features cypress wood walls and handcrafted Japanese ceramics that reflect traditional craftsmanship, while spring water from Kagoshima is used specifically for rice preparation to honor Japanese culinary customs. These design choices and ingredient sourcing create a space where dining becomes a direct connection to Japanese regional traditions.

Advance reservations are essential since seating is extremely limited and demand is high. The restaurant is located in the Four Seasons Hotel with lunch and dinner service available.

The head chef regularly travels to Tokyo to personally hand-select the finest ingredients from Toyosu Market, maintaining a direct link to the original location. This practice ensures that each bowl of sushi carries the same quality and authenticity as the Tokyo establishment.
