The circular structure spans 51 meters in diameter with three concentric adobe walls and a hexagonal tower in its center at San Carlos Street.
Engineer Jose Luis Coo and Elena Tocornal Bustamante established this wine production facility in 1895, which generated 300,000 kilograms of grapes annually at its peak.
The cellar represents the evolution of Chilean wine production methods from the late 19th century, incorporating European grape varieties and traditional fermentation techniques.
The building contains three levels designed for specific wine production tasks: barrel storage, aging processes, and industrial manufacturing operations.
The radial layout distributed across 1,500 square meters features an innovative anti-seismic earthen architecture, rare in Chilean industrial constructions.
