Sukiyabashi Jiro is a traditional Edomae sushi restaurant located in the basement of the Tsukamoto Sozan Building in Ginza. The intimate ten-seat counter runs along a simple wooden bar where diners sit directly in front of the chefs, watching each movement in rice preparation and fish handling.
Jiro Ono opened the restaurant in 1965 at a time when sushi was still mainly sold at street stalls, transforming it into a destination for fine dining. The three Michelin stars awarded in 2007 marked a first for a sushi establishment and fundamentally shifted international perceptions of this cuisine.
The restaurant follows the omakase principle, where the chef determines the sequence and selection while guests observe the preparation in silence. Each piece of nigiri is served immediately after shaping to preserve ideal temperature and texture, reflecting Japanese dedication to perfect timing.
Reservations must be made through select luxury hotel concierges weeks or months in advance, as no direct bookings are accepted. The meal proceeds quickly over roughly 30 minutes, so guests should arrive on time to avoid disrupting the scheduled flow.
Jiro Ono's eldest son, Yoshikazu, has assumed daily leadership since the 1990s, while his father continued working into his 90s. The restaurant lost its Michelin stars in 2019 because the guide no longer considered it representative, as very few guests can access it through the concierge requirement.
