The establishment operates within a historic colonial building dating back over one hundred years, representing the traditional architectural heritage of Mérida's downtown district and preserving the cultural legacy of Mexican cantina establishments.

Founded by members of the Yucatán Symphony Orchestra from diverse international backgrounds including France, Spain, Italy, and the United States, Dzalbay promotes cultural exchange through jazz and blues performances featuring both local and international artists.

The venue opens daily from 4:00 PM to midnight, offers over 30 craft beers and 30 varieties of mezcal alongside casual dining options, and requires valid identification for entry as admission is restricted to patrons aged 18 and older.

Unlike traditional Mexican cantinas that typically close around 8:00 PM, Dzalbay extends its hours until midnight and specializes exclusively in jazz and blues performances, earning recognition as the premier jazz club in Mérida with a perfect five-star rating.
